Kosher Pasta e Fagioli

150 g Ola Ditali
200 g white beans (dried)
200 g cannellini beans (dried)
200 g chickpeas (dried)
30 ml extra-virgin olive oil (E.V.O.O.)
200 g onion
100 g carrots
100 g celery
1 large potato, diced
1 sprig of thyme

Preparation

These are three simple steps for a kosher pasta and beans recipe. Soaking time: 12 hours.

Soak all types of beans (if using dried) in cold water overnight.

The next day, clean and finely chop the onion, carrots, and celery. Heat the olive oil in a pot, sauté the vegetables, then add the drained beans, the diced potato, and the washed and dried thyme, removing the leaves from the stem.

Cover with cold water and bring to a boil. About ten minutes before the beans are fully cooked, around 50 minutes from the start, season with salt and pepper and add the Ola ditali. Let the pasta cook according to the instructions on the package.
